Serves 6-8 people
2 tablespoons canola oil 1 teaspoon salt
1 pound ground beef 1 teaspoon pepper 1/2 small yellow onion, diced 1 teaspoon parsley
1 teaspoon minced garlic 1 teaspoon oregano 1/2 cup mayo 3/4 cup shredded cheddar cheese
1/2 cup whole or 2% milk 1/2 shredded cheddar cheese (topping) 3 eggs 1 1/2 cups frozen hash browns, thawed
Preheat the oven to 375°F.
Prep a 9 inch cake pan with a non-stick spray or line with parchment paper. In the cake pan, press 1 1/2 cups of hash browns down in the bottom of the pan to create a crust. Lightly season the top of hash browns with salt and pepper.
In a large skillet, heat 2 tablespoons of canola oil over median-high heat. Sauté onions and garlic until they are lightly browned. Incorporate 1 pound of ground beef and lightly season with salt and pepper. Cook until browned and drain excess oil.
In a medium sized mixing bowl combine ingredients: 1/2 cup of mayo, 1/2 cup of milk, 3 eggs, 1 teaspoon of salt, 1 teaspoon of pepper, 1 teaspoon of parsley, 1 teaspoon of oregano, and 2/3 cup of shredded cheddar cheese. Whisk until all ingredients are well blended. Stir in drained ground beef and pour mixture on top of hash brown in cake pan.
Bake for 25 minutes, until the filling is puffed up and golden brown. Top with shredded cheddar cheese and bake until cheese is melted. Cool for 10-15 minutes and serve.
